September Recipe: Yummy, Goldeny, Cheesy Baked Cauliflower Tots

I LOOOOOVE tater tots. They are in a food group all their own. I don’t know what it is about them. Perhaps it’s the golden crispy goodness. Perhaps it’s the fact that they just melt in your mouth. Maybe it’s the fact that it’s guilty pleasure food in it’s most accessible and crunchy form. Whatever it is, I am hooked!

There are times that I go a little over board with the tater tot cravings and so this little guy steps in QUITE nicely! I recently stumbled across a pin a few weeks ago and instantly started salivating. This past weekend my friend and I attempted to make the recipe for a movie night with friends. At the time, I couldn’t find my pin, so we ended up concocting our own. Either way, they came out delicious. Nom nom nom!

Yummy, Goldeny, Cheesy Cauliflower Tots 
(adapted)

Ingredients: 
1/2 large head caulflower, coarsely chopped
1/3 cup cheddar
1/4 cup grated Parmesan or Romano cheese
2 T coconut flour
1/2 tsp. salt
1/2 tsp. seasoning of your choice
Black pepper to taste
1 egg

Instructions: Preheat oven to 400F.  Spray a mini muffin pan (like this one) with non-stick spray or grease with butter.

Removing the leaves first, coarsely chop the cauliflower and steam in a pan with a little bit of water until tender. Drain.
With a food processor or hand held blender, add the cauliflower, and pulse until the cauliflower is finely chopped but still slightly chunky.  (Do not over process – or you might end up with soup!)  Be sure to drain off any excess water.
Put finely chopped cauliflower into a bowl and add the cheeses, coconut flour, salt & pepper, seasonings. Stir until all ingredients are well-combined.  Next, add the egg and stir until the ingredients are mostly coated with egg.
Scoop out 1in round spoonfuls of the mixture and drop it in the mini muffin pan and bake 15 minutes.  Carefully turn each cauliflower tot over in the muffin tin and bake 15 minutes more, making sure to create a delicious crunchy goldenness on all sides.  For the most enjoyment, serve hot hot hot with ketchup, honey mustard, or any other favourite dipping sauce!
